PHOOEY to those who say this is only for the purists! Stuff and nonsense!The possibility for a more delightful relationship with a machine than aman can have with his La Pavoni espresso machine surely doesn't existoutside an Arthur C. Clarke novel. I really can think of no other mod conwhich is truly indispensible in the way that Ralph, our little Europiccola,is.
Difficult to use? Pshaw! Is a bicycle difficult to use? At firstmaybe, but all of a sudden you wonder what the fuss was about. With alittle practice - and practice is half the fun of it - you will have themost beautiful espresso - thick crema and all - merrily widdling out thelittle spout everytime.
Ralph is delightfully simple to use, as a matterof fact: water in, turn on, coffee in, lever up, lever down, and you'redone. How hard can that be?
Getting your espresso right comes down to alot of other variables, which are the same for any espresso machine - thesort of coffee you use, the correct grind, the correct grinder (if yougrind yourself, the grinder is really critical) the correct pressure, eventhe type of water you put in the machine. If you're having trouble grindingyour own then head down to the grocers, pick up a tin of Illy coffee, andBINGO - you may as well be in a Palazzo San Giovanni with a pair of smartsunnies and a scooter shouting, "prego" at passers by, that's howItalian you'll feel. And the coffee is divine.
Honestly, the very sightof that cute little chappie sitting, glinting on our bench every morning,ready to gladden the very experience of waking up and getting ready forwork is enough to make my heart sing. I love my little La Pavoni. You'lllove yours, too. Depend on it. I know I do.

Please trust me, although I may not be an EXPERT on coffee, I know ALOT about espresso.I have worked in the coffee business for over 5 years. I have tasted the good, the bad, and the ugly. I drink espresso and espresso drinks regularly.Through my years of drinking espresso I beleive there are two things essential to the perfect cup. 1. The beans must be dark, oily, and finely ground. They must be of the highest quality you can afford. 2. The most important....your machine must be a REAL espresso maker.Forget about those combo coffee makers.Forget about Name-brand department store machines...they all have one thing in common.The espresso always tastes weak and you cannot control the strength of it.These ordinary machines cannot give you rich espresso topped with Creme( a frothy rich creamy foam that floats atop the perfect espresso).This is because no machine, except for industrial high-tech machines used in coffee shops, can carry the pressure necessary to create the perfect espresso. I bought one of these a couple of months ago and although it is a bit expensive it is one of the best purchases I've made in a long time.Itlooks great.It is so well made, it feels like it will last forever as itis so simple, no electronics to break down no plastic bits to break off. You get a huge amount of control over the way the coffee tastes, it's allin the speed of lowering the handle and the tightness of grinds.It takesa few attempts to get it right but once you've worked it out you'll neverlook back.
